Well for this time of the year when it's raining outside, and you feel like something to lift your spirits up, try this - Hearty Mac and Cheese.
I found this on-line the other day when I was trying to find something for dinner that I've never cooked before. It says it serves 4 but you could easily get 6 portions out of this. (Sorry about the grainy picture, I had to take it on my phone)
For this dinner you will need
340g Broccoli Florets
340g Can of Sweetcorn
1Tsp English Mustard
175g Strong Cheddar Cheese (grated)
*optional extra - a few cream crackers crushed (add just before the grated cheese on top for a cruchy topping)
- Heat the oven to 200 C, cook macaroni for 5 mins then add the broccoli and cook until just tender. Drain and put into an oven-proof dish.
- Melt the butter in a pan, stir in the flour and cook for 1 min. Remove from the heat and gradually add in the milk. Return to the boil and cook stirring until the sauce thickens.
- Remove from the heat and add the mustard and three quarters of the cheese and stir until melted.
- Add the sweetcorn and pour into the dish. Fork the sauce through the pasta and broccoli. Scatter the cheese on top and bake in the oven until the cheese is golden.
